Kakuni | Braised pork belly

Braised pork (角煮) is a classic winter dish in Japan.

It's often served with boiled eggs, and go quite well with rice, or good quality of Sake.


The melting texture from the skin is so good!! This dish will be in your winter cooking routine for sure!


Kakuni | Braised pork belly



[Serving] 4-5serves

[Prep time] 10 mins (Does not include time to soak Kombu)

[Cook time] 2.5 hours

[Storage] 3-4days in a fridge

[Ingredients] (GRAM)


-Pork belly (skin on) 1200g

-Onion 2

-Garlic 10g

-Ginger (skin on) 10g

-Egg 5-6


(Cooking liquid)

-Water 800ml

-Kombu (dried kelp) 3g

-Sugar 1tbsp (15g)

-Sake 2tbsp (30ml)

-Mirin 2 tbsp (30ml)

-Soy sauce 5 tbsp (75ml)


 

[Ingredients] (OUNCE)


-Pork belly (skin on) 2.65lb

-Onion 2

-Garlic 0.35oz

-Ginger (skin on) 0.35oz

-Egg 5-6


(Cooking liquid)

-Water 28.2oz

-Kombu (dried kelp) 0.1oz

-Sugar 1tbsp (0.5oz)

-Sake 2tbsp (1oz)

-Mirin 2 tbsp (1oz)

-Soy sauce 5 tbsp (2.6oz)

1:13 Sear pork

5:12 Soft boiled egg

[Instruction]


[Chapter1: Prepare Dashi]

Soak water and kombu for 1hour

(Best to be over night)



[Chapter2: Prepare pork]

  1. Make holes on the skin

  2. Cut into your liking


[Chapter3: Sear pork]

  1. Cold pan. Vege oil. Medium heat. Pork on

  2. Sear until get brown. Then sear all the other side with high heat

  3. Put in a pot skin side down

  4. Splash water on the pan. Scrape and pour the liquid in the pot


[Chapter4: Cooking liquid]

Mix all in the list except the Soy sauce



[Chapter5: Slow cook]

  1. Add the cooking liquid and the veggies into the pot

  2. Boil, then simmer for 30 mins

  3. Add soy sauce. Lid on. Cook 2 hours

(If using pressure cooker, lid on now. Cook 1 hour)



[Chapter6: Soft boiled egg]

  1. Hot water. Vinegar. Salt. Drop eggs (eggs should be cold)

  2. Cook medium heat for 7 mins

  3. Chill completely, then peel


[Chapter7: After cooking]

  1. Once it becomes not too hot, chill in a fridge for few hours (Best over night)

  2. Separate the egg and microwave 20-30 sec to discard the jellied surface

  3. Reheat the pork. Done mate!!


[FAQ]

Q: Can I eat the veggies too?

A: Yes!! Especially the onion is so yummy!!
