General Tso's chicken is not a Japanese dish, but I was requested by so many viewers, so here is my version!!
This dish is usually made with chicken stock, but making fresh stock at home takes many hours and lot of effort.
However pre-made packet stock just doesn't taste good. But the power of kombu solve this problem!! So there's no hustle required, but it's still full of flavour!!

-Chicken thigh 600g
-White sesame some
(Kombu salt)
-Salt 50g
-Kombu 4g

-Sugar 1tsp (5g)

-Soy sauce 3tbsp (45ml)
-Oyster sauce 1.5tbsp (30g)
-Rice vinegar 2.5tbsp (32ml)
-Sesame oil 1.5tsp (7.5ml)

-Scallion 50g
-Garlic (As peeled) 15g
-Ginger (As peeled) 10g
-Red chilli 20g
-Water 300ml

-Corn flour 1.5tbsp (15g)
-Kombu salt 2/3tsp (4g)

-Rice flour 90g
-Corn flour 50g
-Kombu salt 1/4tsp (1.3g)

-Chicken thigh 1.32lb

-Salt 1.7oz
-Kombu 0.15oz
(Brine)
-Water 17.64oz
-Kombu salt 1tsp (0.2oz)
-Sugar 1tsp (0.2oz)
(Marinade)
-Soy sauce 3tbsp (1.6oz)
-Oyster sauce 1.5tbsp (1oz)
-Rice vinegar 2.5tbsp (1.1oz)
-Sesame oil 1.5tsp (0.25oz)
(Sauce)
-Scallion 1.75oz
-Garlic (As peeled) 0.5oz
-Ginger (As peeled) 0.35oz
-Red chilli 0.7oz

-Brown sugar 3.5tbsp (1.6oz)
-Corn flour 1.5tbsp (0.5oz)
-Kombu salt 2/3tsp (0.15oz)

-Rice flour 3.2oz
-Corn flour 1.75oz

[Instruction]
[Chapter1: Prepare chicken]
Cut them into bite size. Leave the skin on
Mix the stuff for (Brine)
Soak the chicken in the brine 1hr to 24hours
[Chapter2: Prepare veggies]
Chop scallion. Keep the leaves separate
Mince garlic, ginger, chilli. Separate the chilli
Toast some sesame
[Chapter3: Marinade]
Strain the chicken
Mix the stuff for (Marinade)
Use 2.5tbsp (37ml / 1.3oz) for the chicken
Keep the remaining marinade for the sauce
Massage and marinade the chicken for 30mins
[Chapter4: Sauce]
Mix the stuff for (Sauce) except the veggies
Cold pan. Vege oil. Garlic and ginger. Low to med heat
Once it's fragrant, add chilli
Once they look light brown, add scallion stem
Cook 30-40sec, then add the sauce
Medium heat. Boil 20-30 sec
Remove from the heat. Set aside

Mix the stuff or (Coating)
[Chapter6: Fry chicken]
Fill oil on the pan until half filled
Heat oil to 220℃ (428F)
Strain the chicken, Mix with the coating
Fry in the oil until golden (2.5-3mins)
Pour some oil onto the other side while cooking
Try to keep the oil around 170℃ (338F)
Flip. Cook the other side until golden (1.5-2mins)
Remove from the oil, rest 3-4mins

Reheat the sauce
Add the chicken
Sprinkle some sesame and scallion leaf
